Didi grew up in Bulgaria, a country where fermented foods were never a wellness trend. They were simply part of everyday life — present at the table, passed through family rhythm, and rooted in daily nourishment.

Years later, after a life shaped by international travel, demanding schedules, and high-pressure environments, she found herself searching for a more grounded way to care for her body.
